Hello all!

Recently I was let go at my job because of the company having it strained with money and time for the people working there, me included. It was not what I had expected after two and a half years of service but times are like they are right now.

So, now I’m looking for other places to work but it goes slow and thus far I have not reached success in the matter.

Since I got nothing but time on my hands now and very little money I’m opening commissions.

Chocolate pear muffins

The sweet treat for today is Chocolate pear muffins.

It’s chocolate muffins filled with pearjam topped with icing sugar.

To get hearts on the muffins, cut out hearts from waxpaper and place on the muffins before adding the icing sugar.

Apple pie

Here is another sweet treat I made. Sweet sweet apple pie with oatmeal crust and glazed with syrup and brown sugar.

I made home made almond mass as extra filling under the apples to make it extra moist.

I got the apples from friends of my parents who has apple trees in their yard so not only was it tasty but also grown close by. Eco friendly :D

Chocolate pear cake

Here is another cake I made for my parents when I went to visit them in Nynäshamn outside of Stockholm. 

I always enjoy visiting them and do it as often as I can.

For this cake I made a chocolate base and filled one layer with butte-cream and pear marmalade.

I’ve made the decorations by hand out of white marzipan. It took a while but it was fun. To attach the decorations I used butter-cream.

Cinnamon buns

Cinnamon buns is one of the treats that are most common here in Sweden. We eat them everyday at cafés, we make them at home, bring to work for conferences and we even have a day especialy dedicated to the sweet cinnamony treat!

They are tasty as they are and can be enjoyed with coffee, tea or lemonade and if you want to make someone happy, treat them to cinnamon buns :D

Ingredients:

50 grams of yeast - dry or soft

75 grams of salted butter

2 1/5 dl of milk

1/2 dl of white sugar

1/2 teaspoon of salt

6 dl of all purpose flour

For the filling:

100 grams of salted butter

1/2 dl of white sugar

1 tablespoon vanilla sugar

1 tablespoon of pulverized cinnamon 

For the topping: 

Brown sugar

How you do it:

1. Put the yeast in a dry bowl.

2. Melt the butter in a pan and pour in the milk. Heat up to 37°C (fingerwarm).

3. Take the milk and butter mixture and pour it over the yeast in the bowl little by little while stirring until the yeast is completely dissolved in the bow. 

4. Add sugar and salt while stirring and last but not least add the flour a little at a time until it’s a smooth dough. Powder a bit of flour on the dough and cover for 30 minutes.

5. Take the butter, cinnamon, vanilla sugar and white sugar for the filling and mix it in a separate bowl. Set it aside. 

6. When the dough has expanded to twice it’s size, pour it out on a lightly dusted work surface and work it by hand for 3 min by hand. 

7. Cut the dough into 3 equal sized pieces and roll them out into squares that are about half a cm thick.

8. Spred the cinnamon filling on the entire surface and roll from the top side down tot he bottom so you have a long roll. Cut the roll into 1/2 cm thick pieces and putt into mini muffin cups with 3 in each in a muffin form or on a baking pan.

9. When all rolls are cut up, take  brown sugar and spread a little on each bun.

10. Cover the buns with a kitchen towel for 30 more minutes to let rise. Heat your owen up to 250°C and have a cup of tea.

11. Put the buns in the owen for about 5-6 minutes and keep a good eye on them so they don’t burn. Let them cool of a bit before serving.

Vanilla oat Ice cream soda float

Hi guys! 

Today I wanted to try something new that also took almost no time at all to make.

This treat is popular in the states but I haven’t seen it over here in Sweden so I decided to give it a try but alternate it a little bit by using vanilla oat ice cream from the brand Oatly. It’s a really delicious oat based ice cream that tastes just like regular ice cream but without lactose, soy or milk.

What you need is:

Soda of your choice 

Vanilla oat ice cream from Oatly or any vanilla ice cream of your choice

A cup or glass

A spoon

How you do it:

1. Put 1 to 2 scoops of ice cream in a cup or glass.

2. Pour soda over the ice cream and watch the magic happen when the two combine.

3. Stir it lightly with the spoon and enjoy!
